Gluten Free Diet (GFD)

The treatment for Celiac Disease is a life long exclusion of gluten from diet, under professional supervision.

This Gluten Free Diet (GFD), however, doesn''t stop you or your child from eating a variety of foods and enjoying life to the fullest.

Gluten free diet is devoid of foods that contain gluten:

Wheat
Other varieties of wheat (spelt, kamut, durum)
Barley
Rye (this is a cereal of European origin and is different from RAI which is mustard seed or sarson seed)
Oats
Triticale (this is similar to wheat)

This diet allows a free intake of the following

Cereals: Rice, buckwheat, maize, bajra, millets, ragi, amaranth, potato starch, tapioca starch, sago, corn meal, quinoa, corn starch, arrowroot
Vegetables
Pulses, and flours made out of them (besan, soya flour, moong dal flour)
Fruits
Nuts
Meat, fish, poultry, eggs
Cheese and milk
Others: Spirits, wines, liqueurs and ciders, whisky (except malt whisky)

It is important to understand that many people with CD are nutritionally challenged because of malabsorption of nutrients in their small intestine. Therefore, care should be taken to plan a nutritionally balanced GFD containing adequate amount of calories, proteins and fats.Nutritional supplements with adequate amount of vitamins and minerals are usually prescribed to correct deficiencies that may occur in CD.
